Essentially, "Betutu" refers to a cooking method. Originally, a whole, seasoned chicken was wrapped in banana leaves, then wrapped in areca nut fronds, and then marinated in hot rice husks for hours. This ancient method created a distinctive flavor and incredibly tender meat texture. However, over time, the cooking method adapted to modern trends, such as the use of ovens or pressure cookers, without compromising the authentic flavor.
The Unrivaled Characteristics of Ayam Betutu
There are two things that differentiate Ayam Betutu from other chicken dishes:
Base Genep Seasoning : This is the secret to Ayam Betutu's deliciousness. Base genep is a traditional Balinese seasoning blend consisting of 15 or more spices, including shallots, garlic, chilies, turmeric, ginger, galangal, galangal, lemongrass, and shrimp paste. This harmonious blend of spices provides a complex aroma and flavor.

Ingredients:
1 whole free-range chicken (approximately 1-1.5 kg)
3-5 banana leaves for wrapping
Enough areca leaf fronds or aluminum foil
Fine Spices (Base Genep):
100 grams of red onion
50 grams of garlic
100 grams of red chili peppers (to taste)
20 grams of large red chilies
30 grams of galangal
50 gr years
40 g garlic
50 grams of turmeric
1 tbsp grilled shrimp paste
2 stalks of lemongrass, take the white part
1 tsp peppercorns
1 tbsp coriander powder
10 grams of candlenuts, roasted
Enough brown sugar, salt, and cooking oil
How to make:
Prepare the Seasonings : Grind all the ground spices (base genep). Sauté in a little oil until fragrant and cooked through. Cooked spices will not be rancid.
Marinate the Chicken : Rub the entire surface and abdominal cavity of the chicken with the sautéed spices. Let it sit for at least 1 hour to allow the spices to penetrate.
Wrap the Chicken : Stuff the remaining spices into the chicken's abdominal cavity. Wrap the chicken in banana leaves, then wrap it tightly with areca palm fronds or aluminum foil. Make sure there are no gaps to prevent steam from escaping during steaming.
Cooking Process : Steam the wrapped chicken for 2-3 hours until completely tender. If using an oven, bake at 180°C for 2-3 hours.
Finishing : Once cooked, remove from heat and serve the Ayam Betutu. Unwrap the chicken and drizzle with the remaining sauce.
Ayam Betutu is best served with warm rice, plecing kangkung (a salad made from water spinach), and sambal matah (rice paste). The combination of spicy, savory flavors and strong spice aromas will create an unforgettable culinary experience. Enjoy!
